Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350℉ (175℃). Line a 9×5-inch loaf pan with parchment paper for easier removal after baking, or alternatively, generously spray with nonstick cooking spray that contains flour, such as Baker’s Joy.
  2. Make Cinnamon Sugar Mixture: In a small bowl, combine the granulated sugar and ground cinnamon. Stir thoroughly to blend and set aside for layering later.
  3. Combine Dry Ingredients: In a larger mixing bowl, whisk together the all purpose flour, light brown sugar, and baking powder until they are evenly mixed.
  4. Add Wet Ingredients: Create a well in the center of the dry ingredients and pour in the egg, whole milk, vegetable oil, and vanilla extract. Stir gently but thoroughly until the batter is evenly combined and smooth.
  5. Assemble the Bread Layers: Pour half of the batter into the prepared loaf pan, smoothing it out. Sprinkle ¾ of the cinnamon sugar mixture evenly over this first batter layer to create a sweet cinnamon layer.
  6. Add Remaining Batter and Cinnamon Sugar: Pour the remaining batter on top of the cinnamon sugar layer, carefully spreading it without mixing. Then sprinkle the remaining cinnamon sugar mixture on top to finish the layering.
  7. Bake: Place the pan in the preheated oven and bake the cinnamon bread for about 60 minutes. Check doneness by inserting a toothpick into the center of the loaf; it should come out clean.
  8. Cool: Remove the bread from the oven and allow it to cool completely in the pan before slicing and serving to ensure clean slices and enhanced flavor.
  9. Prepare Optional Icing: In a small bowl, whisk together powdered sugar, 2 tablespoons of milk or heavy cream, and vanilla extract until smooth. Adjust consistency by adding more liquid if too thick or more powdered sugar if too thin.
