Description

Coconut Chicken is a delightful dish that combines tender chicken with the sweet, tropical richness of coconut, offering a crispy exterior and juicy, flavorful chicken inside.


Ingredients

4 boneless, skinless chicken breasts

1 cup unsweetened shredded coconut

1/2 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/2 teaspoon paprika

2 tablespoons vegetable oil (for frying)


Instructions

  1. Prepare the breading station: In one shallow bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.
  2. In another shallow bowl, whisk the eggs until fully combined.
  3. In a third shallow bowl, combine the shredded coconut and panko breadcrumbs.
  4. Dip each chicken breast into the seasoned flour, ensuring it is evenly coated, then dip into the egg wash, and finally coat thoroughly in the coconut and breadcrumb mixture.
  5. Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot, carefully place the breaded chicken breasts into the skillet.
  6. Cook the chicken for about 5-6 minutes on each side, or until golden brown and fully cooked through (internal temperature should reach 165°F).
  7. Remove the chicken from the skillet and let it rest for a few minutes before serving.

  1. For a healthier version, bake the chicken at 400°F for 20-25 minutes, flipping halfway through.
  2. For a gluten-free option, substitute the panko breadcrumbs with gluten-free breadcrumbs or crushed gluten-free crackers.
