Gelatine Mixture
- 1 1/2 tsp gelatine powder
- 1/4 cup water
Pudding
- 1 400 ml (14.5 oz) can full-fat coconut milk (not boxed)
- 3 Tbsp sugar
- 1 Tbsp matcha powder
Instructions
- Bloom gelatine: Add water to a small bowl and gently sprinkle the gelatine powder evenly over the surface to avoid clumps. Let it sit for 5-10 minutes to fully absorb the water and bloom.
- Heat coconut milk: In a small saucepan, combine the canned coconut milk and sugar. Whisk until well mixed and heat over medium until the mixture is steaming but not boiling.
- Add matcha powder: Sift the matcha powder into the warm coconut milk mixture and whisk quickly to prevent lumps and ensure even distribution.
- Add bloomed gelatine: Remove the saucepan from heat, add the bloomed gelatine, and whisk thoroughly to incorporate it completely. Let the mixture rest for 5 minutes, then whisk again to ensure full absorption.
- Chill the pudding: Pour the mixture into individual serving glasses, tea cups, or bowls. Refrigerate for at least 4-6 hours or preferably overnight until fully set. Optionally, serve topped with lightly sweetened whipped cream.
