Description

A Mediterranean-inspired sandwich featuring flaky cod fillets layered with garlicky tomato sauce on toasted focaccia bread, finished with fresh greens. A rustic, flavorful meal perfect for lunch or dinner.


Ingredients

  • 24 cod fillets (fresh or thawed)
  • 4 pieces focaccia bread, sliced into sandwich portions
  • 3 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (14 oz) crushed tomatoes or tomato passata
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tbsp fresh basil or parsley, chopped
  • 1 tsp lemon juice (optional)
  • 1 cup arugula or baby spinach (optional, for garnish)


Instructions

  1. Heat 1 tbsp olive oil in a skillet over medium heat. Add onion and sauté until softened.
  2. Add garlic and cook 30 seconds, then stir in tomato paste. Cook for 1–2 minutes.
  3. Stir in crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer for 10–15 minutes, then stir in basil or parsley.
  4. Pat cod fillets dry and season with salt and pepper. Heat 2 tbsp olive oil in a separate skillet over medium-high heat. Sear cod 3–4 minutes per side until golden and flaky. Add lemon juice if desired.
  5. Lightly toast focaccia slices.
  6. Spread tomato sauce on the bottom focaccia slices, top with cod, extra sauce if desired, and arugula or spinach. Cover with top focaccia slices.
  7. Serve warm with extra sauce on the side.

Notes

  • Focaccia is ideal, but ciabatta or sourdough can be substituted.
  • Add mozzarella or burrata for a cheesy variation.
  • Cod can be swapped with haddock, tilapia, or halibut.
  • Assemble sandwiches fresh to prevent bread from becoming soggy.
  • For a crispy variation, press the sandwich in a panini press or skillet.
