Description

This classic coffee cake recipe is a moist and flavorful treat perfect for breakfast or dessert. Featuring a tender cinnamon-sugar swirl and a buttery crumb, it is easy to prepare and ideal for sharing with family and friends.

Ingredients

Filling

  • 1 tbsp ground cinnamon
  • ½ cup brown sugar, packed

Cake Batter

  • ½ cup margarine or butter, softened
  • 1 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 cup soured milk
  • 1 tsp baking soda
  • 2 cups all-purpose flour

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan thoroughly with nonstick spray to prevent sticking. Set the pan aside for use later.
  2. Prepare Filling: In a small bowl, combine the ground cinnamon and brown sugar. Mix well and set aside. This mixture will be used to create the signature swirl in the cake.
  3. Make Cake Batter – Cream Butter and Sugar: In a large mixing bowl, blend together the softened margarine or butter with the white sugar and eggs until the mixture is smooth and well combined. This creates a light base for your cake batter.
  4. Add Flavor and Leavening: Into the batter, stir in the vanilla extract and baking powder evenly. These ingredients provide flavor and help the cake rise during baking.
  5. Combine Milk and Baking Soda: In a separate bowl, mix the soured milk with the baking soda. This combination will react to create a tender crumb in the cake.
  6. Incorporate Dry Ingredients Alternately: Gradually add the flour and the soured milk mixture alternately to the batter, stirring gently after each addition. Continue until all ingredients are combined and the batter is smooth.
  7. Assemble Cake Layers: Pour a layer of batter into the prepared pan, just enough to cover the bottom. Sprinkle a generous layer of the cinnamon-sugar filling over the batter. Pour the remaining batter over the filling in the pan, then sprinkle the rest of the cinnamon-sugar mixture on top to create swirls throughout the cake.
  8. Bake: Place the pan in the preheated oven and bake at 350°F for approximately 25 minutes. The cake is done when a toothpick inserted into the center comes out clean.
  9. Cool and Serve: Allow the cake to cool completely in the pan before slicing to let the flavors set and make slicing easier. Serve as a delicious accompaniment to coffee or tea.

Notes

  • For soured milk, you can add 1 tablespoon of lemon juice or vinegar to 1 cup of milk and let it sit for 5 minutes.
  • Use softened margarine or butter to ensure smooth batter mixing.
  • Be careful not to overmix the batter to keep the cake tender.
  • Check the cake a few minutes before 25 minutes as ovens vary.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
