Ingredients
Filling
- 1 tbsp ground cinnamon
- ½ cup brown sugar, packed
Cake Batter
- ½ cup margarine or butter, softened
- 1 cup white sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1 cup soured milk
- 1 tsp baking soda
- 2 cups all-purpose flour
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan thoroughly with nonstick spray to prevent sticking. Set the pan aside for use later.
- Prepare Filling: In a small bowl, combine the ground cinnamon and brown sugar. Mix well and set aside. This mixture will be used to create the signature swirl in the cake.
- Make Cake Batter – Cream Butter and Sugar: In a large mixing bowl, blend together the softened margarine or butter with the white sugar and eggs until the mixture is smooth and well combined. This creates a light base for your cake batter.
- Add Flavor and Leavening: Into the batter, stir in the vanilla extract and baking powder evenly. These ingredients provide flavor and help the cake rise during baking.
- Combine Milk and Baking Soda: In a separate bowl, mix the soured milk with the baking soda. This combination will react to create a tender crumb in the cake.
- Incorporate Dry Ingredients Alternately: Gradually add the flour and the soured milk mixture alternately to the batter, stirring gently after each addition. Continue until all ingredients are combined and the batter is smooth.
- Assemble Cake Layers: Pour a layer of batter into the prepared pan, just enough to cover the bottom. Sprinkle a generous layer of the cinnamon-sugar filling over the batter. Pour the remaining batter over the filling in the pan, then sprinkle the rest of the cinnamon-sugar mixture on top to create swirls throughout the cake.
- Bake: Place the pan in the preheated oven and bake at 350°F for approximately 25 minutes. The cake is done when a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the cake to cool completely in the pan before slicing to let the flavors set and make slicing easier. Serve as a delicious accompaniment to coffee or tea.
Notes
- For soured milk, you can add 1 tablespoon of lemon juice or vinegar to 1 cup of milk and let it sit for 5 minutes.
- Use softened margarine or butter to ensure smooth batter mixing.
- Be careful not to overmix the batter to keep the cake tender.
- Check the cake a few minutes before 25 minutes as ovens vary.
- Store leftovers in an airtight container at room temperature for up to 3 days.
