Ingredients
Brownie Batter
- 10 tablespoons (142 grams) unsalted butter
- 1 cup (200 grams) granulated sugar
- 1/3 cup (67 grams) packed light brown sugar
- 3/4 cup plus 2 tablespoons (88 grams) unsweetened cocoa powder, sifted
- 1/2 teaspoon vanilla extract
- 2 large eggs plus 1 egg yolk
- 1 tablespoon corn syrup
- 2/3 cup (85 grams) all-purpose flour
- 1 tablespoon cornstarch
- 1/4 teaspoon fine sea salt
Frosting
- 1/2 cup heavy cream
- 1 1/2 cups (255 grams) semisweet chocolate chips
- Rainbow candy-coated chocolate chips for topping
Instructions
- Prepare Baking Pan: Preheat the oven to 350°F (175°C). Line an 8-by-8-inch metal baking pan with parchment paper or foil and spray it lightly with cooking spray for easy removal.
- Melt Butter and Mix Sugars: In a large microwave-safe bowl, melt the unsalted butter on high for about 90 seconds. Stir in granulated sugar, light brown sugar, and sifted cocoa powder until combined. Let cool slightly if still hot to avoid cooking eggs in the next step.
- Add Eggs and Flavoring: Stir in vanilla extract, the 2 large eggs, 1 egg yolk, and corn syrup until the mixture is smooth and well combined.
- Incorporate Dry Ingredients: Add the all-purpose flour, cornstarch, and fine sea salt to the batter. Stir until just combined; the batter will be thick. Do not overmix to keep the brownies tender.
- Bake the Brownies: Pour the batter into the prepared pan and smooth the surface. Bake in the preheated oven for 25 minutes. Remove and allow to cool completely in the pan before frosting.
- Make Frosting: Place the heavy cream in a small microwave-safe bowl and heat on high for 1 minute. Add semisweet chocolate chips and let sit for 3 minutes. Stir until smooth and glossy to create a ganache.
- Frost Brownies: Pour the chocolate ganache evenly over the cooled brownies and smooth the top with a spatula. Sprinkle generously with rainbow candy-coated chocolate chips.
- Set Frosting: Refrigerate the frosted brownies for 1 to 2 hours or until the frosting is set firmly before cutting into squares.
- Store and Serve: Store brownies in an airtight container for up to 3 days at room temperature or up to 1 week refrigerated. These brownies are best served chilled for optimal flavor and texture.
Notes
- Ensure the brownie batter has cooled slightly before adding eggs to prevent them from cooking.
- Avoid overmixing the batter once flour is added to maintain a fudgy texture.
- Use parchment or foil lining for easy removal from the pan.
- The frosting should be refrigerated to properly set before slicing.
- Brownies can be stored at room temperature for a few days but keep refrigerated for longer freshness.
