Description

Deliciously fudgy and gluten-free Cottage Cheese Brownies combine the rich flavors of melted chocolate and cocoa powder with the creamy texture of blended cottage cheese, offering a moist and healthier twist on traditional brownies. Perfect for a quick 30-minute bake, these brownies are sweetened with coconut sugar and studded with dark chocolate chips for an extra burst of chocolatey goodness.

Ingredients

Brownie Batter

  • ½ cup melted chocolate
  • ⅔ cup coconut sugar
  • 1 cup cottage cheese (blended)
  • ¾ cup milk
  • ⅔ cup cocoa powder
  • ¾ cup gluten free flour
  • ½ tsp baking soda

Add-ins

  • ¾ cup dark chocolate chips

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit and line an 8-inch square baking pan with parchment paper to prevent sticking and ensure easy removal.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the melted chocolate, blended cottage cheese, and coconut sugar. Stir well until the mixture is smooth and evenly blended.
  3. Add Milk: Pour in the milk and stir thoroughly. At this stage, the batter will have a runny consistency, which is normal.
  4. Combine Dry Ingredients: Gradually add the gluten free flour, cocoa powder, and baking soda into the wet mixture. Stir until all ingredients are fully incorporated and the batter thickens.
  5. Fold in Chocolate Chips: Gently fold the dark chocolate chips into the batter to distribute them evenly without melting.
  6. Transfer to Pan: Pour the thickened batter into the prepared pan and spread it out evenly for uniform baking.
  7. Bake: Place the pan in the preheated oven and bake for 20 to 21 minutes, or until the brownies are just set in the middle but still moist.
  8. Cool and Serve: Remove the pan from the oven and allow the brownies to cool completely before slicing to ensure clean cuts and optimal texture.

Notes

  • Use room temperature milk for better mixing.
  • Ensure the cottage cheese is well blended for a smooth batter.
  • Do not overbake to keep brownies moist and fudgy.
  • Substitute dark chocolate chips with nuts or dried fruits if desired.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
