Description
A creamy, savory, and refreshing dip made with cottage cheese, corn, and zesty seasonings, perfect for any gathering.
Ingredients
1 cup cottage cheese
1 cup canned corn, drained
1/2 cup sour cream
1/4 cup chopped green onions
1 tablespoon jalapeño, finely diced (optional for spice)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
1/2 cup shredded cheddar cheese (optional)
Instructions
- In a large mixing bowl, combine the cottage cheese, sour cream, and garlic powder.
- Add the drained corn and mix until everything is evenly incorporated.
- Stir in the chopped green onions, jalapeño (if using), onion powder, salt, and pepper. Mix until well combined.
- If desired, fold in the shredded cheddar cheese for an extra layer of richness.
- Refrigerate the dip for at least 30 minutes to allow the flavors to meld together.
- Serve chilled with chips, crackers, or fresh vegetable slices.
Notes
- This dip can be made ahead of time and tastes even better after sitting in the fridge for a few hours or overnight.
- If the dip thickens after being stored, stir in a little extra sour cream to restore its creamy texture.
- For a spicier version, add more jalapeños or a few dashes of hot sauce.
- Use dairy-free alternatives to make the dip vegan-friendly.
- Store leftovers in an airtight container for up to 3-4 days in the refrigerator.
