Ice Cream Base
- 16 ounces cottage cheese
- ⅓ cup honey (or date syrup)

Instructions
- Prepare the base: Add the cottage cheese, honey, vanilla extract, and sea salt to a blender or food processor to create the creamy ice cream base.
- Blend until smooth: Blend the ingredients until the mixture is smooth and creamy. Use a spatula to scrape down the sides of the blender if needed to ensure even blending.
- Add the dates: Add the pitted dates into the blender and pulse just enough to incorporate them while leaving some chunks for texture.
- Freeze the mixture: Transfer the blended mixture to a larger bowl or bread pan. Optionally drizzle extra honey on top. Freeze for at least one hour for a soft-serve texture, or up to 4 hours for a firmer, scoopable ice cream.
- Serve: Remove the mixture from the freezer, scoop into bowls, and enjoy your homemade cottage cheese ice cream.
