Description

A creamy and naturally sweetened homemade Cottage Cheese Ice Cream that combines the smooth texture of cottage cheese with the rich flavors of honey, vanilla, and dates for a delicious, healthy frozen treat.

Ingredients

Ice Cream Base

  • 16 ounces cottage cheese
  • ⅓ cup honey (or date syrup)
  • 1 tsp vanilla extract
  • ½ tsp sea salt

Add-ins

  • 5 pitted dates

Instructions

  1. Prepare the base: Add the cottage cheese, honey, vanilla extract, and sea salt to a blender or food processor to create the creamy ice cream base.
  2. Blend until smooth: Blend the ingredients until the mixture is smooth and creamy. Use a spatula to scrape down the sides of the blender if needed to ensure even blending.
  3. Add the dates: Add the pitted dates into the blender and pulse just enough to incorporate them while leaving some chunks for texture.
  4. Freeze the mixture: Transfer the blended mixture to a larger bowl or bread pan. Optionally drizzle extra honey on top. Freeze for at least one hour for a soft-serve texture, or up to 4 hours for a firmer, scoopable ice cream.
  5. Serve: Remove the mixture from the freezer, scoop into bowls, and enjoy your homemade cottage cheese ice cream.

Notes

  • For a sweeter ice cream, increase the honey or use date syrup as an alternative sweetener.
  • To make a smoother texture, blend the dates longer or soak them in warm water before blending.
  • This recipe is naturally gluten-free and can be made vegetarian.
  • For best results, use full-fat cottage cheese for creaminess.
  • Adjust freezing time depending on your desired consistency.
