Description

Cotton Candy Marshmallows are a fun, sweet, and nostalgic treat that combines the light, fluffy texture of marshmallows with the vibrant, sugary flavor of cotton candy. These marshmallows are perfect for kids and adults alike and make for a fun project in the kitchen.


Ingredients

1/2 cup cold water

3/4 cup light corn syrup

1 cup sugar

1/4 tsp salt

1 tsp vanilla extract

1/4 tsp cotton candy flavoring (or any cotton candy flavoring of choice)

2 tbsp unflavored gelatin

1/4 cup powdered sugar (for dusting)

1/4 cup cornstarch (for dusting)


Instructions

  1. In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5 minutes to bloom.
  2. In a saucepan over medium heat, combine the corn syrup, sugar, and salt. Stir the mixture until the sugar dissolves.
  3. Once dissolved, bring the mixture to a boil and continue cooking until it reaches 240°F on a candy thermometer.
  4. While the syrup is boiling, begin whipping the gelatin mixture on low speed in a stand mixer.
  5. Once the syrup reaches 240°F, slowly pour it into the gelatin while continuing to mix on low speed. Gradually increase the speed to high and whip for about 10 minutes until the mixture becomes thick and fluffy.
  6. Add the vanilla extract and cotton candy flavoring, and mix until combined.
  7. Pour the marshmallow mixture into a greased 9×9-inch square baking dish, smoothing it out evenly.
  8. Allow the marshmallows to set at room temperature for 4-6 hours or until firm.
  9. Once set, dust a clean surface with a mixture of powdered sugar and cornstarch.
  10. Turn the marshmallow block out of the baking dish and cut it into squares. Dust each marshmallow with the powdered sugar and cornstarch mixture to prevent sticking.

Notes

  1. For color options, you can experiment with different colors and flavors like strawberry or blue raspberry.
  2. Dust the marshmallows in flavored powders like cocoa powder or crushed candy for unique textures and tastes.
  3. If you prefer mini marshmallows, simply adjust the size when cutting them after they set.
