Ingredients

2 chicken breasts (boneless, skinless)

100g vermicelli noodles

1 medium onion, chopped

2 garlic cloves, minced

1 medium carrot, sliced

1 celery stalk, chopped

4 cups chicken broth

1 bay leaf

1/2 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic, cooking until fragrant and soft, about 3-4 minutes.
  2. Add the chicken breasts, carrots, celery, and chicken broth. Stir in the bay leaf and thyme. Bring to a boil, then reduce heat to low. Let it simmer for 20 minutes, or until the chicken is cooked through.
  3. Remove the chicken breasts from the pot and shred the meat using two forks. Return the shredded chicken to the pot.
  4. Add the vermicelli noodles to the pot and let them cook for about 5-6 minutes, or until soft.
  5. Season the soup with salt and pepper to taste.
  6. Remove the bay leaf and discard. Serve the soup hot, garnished with fresh parsley.
