Ingredients
2 chicken breasts (boneless, skinless)
100g vermicelli noodles
1 medium onion, chopped
2 garlic cloves, minced
1 medium carrot, sliced
1 celery stalk, chopped
4 cups chicken broth
1 bay leaf
1/2 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic, cooking until fragrant and soft, about 3-4 minutes.
 - Add the chicken breasts, carrots, celery, and chicken broth. Stir in the bay leaf and thyme. Bring to a boil, then reduce heat to low. Let it simmer for 20 minutes, or until the chicken is cooked through.
 - Remove the chicken breasts from the pot and shred the meat using two forks. Return the shredded chicken to the pot.
 - Add the vermicelli noodles to the pot and let them cook for about 5-6 minutes, or until soft.
 - Season the soup with salt and pepper to taste.
 - Remove the bay leaf and discard. Serve the soup hot, garnished with fresh parsley.
