Bursting with fresh cranberries and zesty orange flavor, it is topped with a tangy orange glaze that adds a perfect finishing touch. Easy to prepare and bake, this recipe yields a flavorful and colorful loaf that’s sure to brighten up your table.

Ingredients

Bread Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup unsalted butter (softened)
  • 1 tablespoon orange zest
  • 3/4 cup orange juice
  • 1 large egg
  • 1 cup cranberries (chopped, fresh or frozen)

Orange Glaze

  • 1 cup powdered sugar
  • 1 1/2 tablespoons orange juice

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan with non-stick cooking spray and set it aside for use.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, and baking soda. Stir these dry ingredients together thoroughly.
  3. Add Butter and Combine: Add the softened unsalted butter to the dry mixture and mix until the batter looks crumbly in texture, similar to coarse sand.
  4. Incorporate Wet Ingredients: Stir in the orange zest, orange juice, and the large egg until the batter is just combined and smooth, being careful not to overmix.
  5. Fold in Cranberries: Gently fold the chopped cranberries into the batter, distributing them evenly throughout.
  6. Transfer and Bake: Pour the thick batter into the prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
  7. Cool the Bread: Allow the bread to cool in the pan for 30 minutes to firm up, then carefully remove it from the pan and place it on a wire rack to cool completely.
  8. Prepare the Orange Glaze: While the bread cools, combine the powdered sugar and 1 1/2 tablespoons of orange juice in a small bowl. Stir until the glaze is smooth and free of lumps.
  9. Glaze and Serve: Once the bread has completely cooled, pour the orange glaze evenly over the top. Let the glaze set for a few minutes before slicing and serving.

Notes

  • Use fresh or frozen cranberries; if using frozen, do not thaw before adding to prevent discoloring the batter.
  • Ensure the orange juice is fresh for the best flavor in both batter and glaze.
  • The glaze can be adjusted for thickness by adding more powdered sugar or orange juice as needed.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
  • This bread freezes well; wrap tightly and freeze for up to 2 months. Thaw before glazing.
