Ingredients
Bread Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup unsalted butter (softened)
- 1 tablespoon orange zest
- 3/4 cup orange juice
- 1 large egg
- 1 cup cranberries (chopped, fresh or frozen)
Orange Glaze
- 1 cup powdered sugar
- 1 1/2 tablespoons orange juice
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan with non-stick cooking spray and set it aside for use.
- Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, and baking soda. Stir these dry ingredients together thoroughly.
- Add Butter and Combine: Add the softened unsalted butter to the dry mixture and mix until the batter looks crumbly in texture, similar to coarse sand.
- Incorporate Wet Ingredients: Stir in the orange zest, orange juice, and the large egg until the batter is just combined and smooth, being careful not to overmix.
- Fold in Cranberries: Gently fold the chopped cranberries into the batter, distributing them evenly throughout.
- Transfer and Bake: Pour the thick batter into the prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
- Cool the Bread: Allow the bread to cool in the pan for 30 minutes to firm up, then carefully remove it from the pan and place it on a wire rack to cool completely.
- Prepare the Orange Glaze: While the bread cools, combine the powdered sugar and 1 1/2 tablespoons of orange juice in a small bowl. Stir until the glaze is smooth and free of lumps.
- Glaze and Serve: Once the bread has completely cooled, pour the orange glaze evenly over the top. Let the glaze set for a few minutes before slicing and serving.
Notes
- Use fresh or frozen cranberries; if using frozen, do not thaw before adding to prevent discoloring the batter.
- Ensure the orange juice is fresh for the best flavor in both batter and glaze.
- The glaze can be adjusted for thickness by adding more powdered sugar or orange juice as needed.
- Store leftover bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
- This bread freezes well; wrap tightly and freeze for up to 2 months. Thaw before glazing.
