This Cream Cheese Crumble Coffee Cake is a decadent layered dessert featuring a tender cake base topped with a cinnamon streusel, a smooth cream cheese filling, and a cinnamon crumb layer. Perfectly spiced and sweetened, it’s finished with a luscious vanilla glaze that adds the perfect touch of sweetness. A delightful treat for breakfast, brunch, or dessert that promises moist texture and rich flavor.

Ingredients

Streusel

  • 1/2 cup unsalted butter (melted)
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups all purpose flour

Cinnamon Filling

  • 6 tablespoons unsalted butter (softened)
  • 2 tablespoons cinnamon
  • 1 cup all purpose flour
  • 1 cup brown sugar

Cheesecake Filling

  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract or vanilla bean paste

Cake Batter

  • 2 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (softened)
  • 2 tablespoons ground cinnamon
  • 3 eggs (room temperature)
  • 2 teaspoons vanilla extract or vanilla bean paste
  • 1 cup milk of choice or buttermilk

Glaze

  • 1 cup powdered sugar
  • 23 tablespoons milk of choice
  • 1 teaspoon vanilla extract or vanilla bean paste

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (177°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper to ensure the cake doesn’t stick.
  2. Prepare the Streusel: In a bowl, mix together the brown sugar, cinnamon, and salt. Stir in the melted butter, then add the flour and mix until crumbly. Set this streusel mixture aside for topping.
  3. Make the Cinnamon Filling: Combine the softened butter, flour, brown sugar, and cinnamon in a bowl. Mix until soft crumbs form. This layer will add a spiced texture within the cake.
  4. Create the Cheesecake Filling: Beat the cream cheese until smooth and creamy. Gradually add granulated sugar, then beat in eggs one at a time, followed by vanilla extract or vanilla bean paste. Mix until the filling is smooth and creamy. Set aside.
  5. Prepare the Cake Batter: In a large bowl, whisk together flour, granulated sugar, baking soda, baking powder, and salt. Add softened butter and beat until the mixture becomes evenly crumbly. Incorporate eggs, vanilla extract, and milk, mixing until smooth but avoid overmixing to keep the cake tender. Spread this batter evenly into the prepared baking pan.
  6. Assemble the Cake: Evenly spread the cinnamon filling over the cake batter layer in the pan. Then spoon and spread the cheesecake filling over the cinnamon filling layer. Finally, top the entire cake evenly with the streusel mixture.
  7. Bake: Place the cake in the preheated oven and bake for 60 to 75 minutes. Test for doneness by inserting a toothpick into the center; it should come out clean or with just moist crumbs attached.
  8. Cool and Chill: Allow the cake to cool completely in the baking pan on a wire rack. After cooling, refrigerate the cake for 3 to 4 hours to let the cheesecake layer set firmly.
  9. Prepare the Glaze: Whisk powdered sugar, milk, and vanilla extract or bean paste together until smooth. Adjust thickness by adding more milk or sugar as needed. Drizzle the glaze over the chilled cake.
  10. Serve: Slice the coffee cake into pieces and serve chilled or at room temperature. Enjoy the delicious layers and creamy texture!

Notes

  • For best results, use room temperature ingredients to ensure even mixing and texture.
  • Make sure the cream cheese is softened to avoid lumps in the cheesecake filling.
  • If you prefer a stronger cinnamon flavor, feel free to increase the cinnamon in the streusel or filling.
  • This cake needs refrigeration after baking to properly set the cream cheese layer, so plan ahead.
  • Use parchment paper lining for easier removal and cleanup.
  • The glaze can be adjusted for thickness to suit your preference; add milk gradually.
  • This recipe works well with buttermilk for a tender crumb, but any milk can be used.
