Ingredients

  1. 1.5 lbs chicken breast or thighs, cut into bite-sized pieces
  2. 8 oz mushrooms (cremini or white button), sliced
  3. 1 medium onion, chopped
  4. 2 cloves garlic, minced
  5. 3/4 cup sour cream
  6. 1 cup chicken broth
  7. 1 tbsp Dijon mustard
  8. 1 tsp paprika
  9. 2 tbsp olive oil or butter
  10. Salt, to taste
  11. Black pepper, to taste
  12. Fresh parsley, chopped (for garnish)
  13. 1.5 cups basmati or jasmine rice
  14. 4 garlic naan (store-bought or homemade)
  15. 1 lb frozen or fresh-cut fries
  16. Oil, for frying or baking fries
  17. Optional: melted butter + minced garlic for brushing naan

Instructions

In a large skillet, heat olive oil or butter over medium heat. Sauté chopped onion for 3–4 minutes until soft, then add garlic and cook for 1 more minute.

  1. Add mushrooms and cook until browned and moisture evaporates, about 6–8 minutes.
  2. Push mushrooms to the side, add chicken pieces, and cook until golden and cooked through, about 6–7 minutes.
  3. Sprinkle in paprika, salt, and pepper. Stir to combine.
  4. Pour in chicken broth, bring to a simmer, and cook for 5–7 minutes until slightly reduced.
  5. Lower heat and stir in sour cream and Dijon mustard. Simmer gently for 3–4 minutes until creamy. Adjust seasoning and garnish with parsley.
  6. While stroganoff cooks, prepare rice according to package instructions. Fluff and keep warm.
  7. Warm garlic naan in a skillet or oven. Optional: brush with melted butter and garlic.
  8. Cook fries according to package or homemade instructions by frying or baking. Season with salt immediately after cooking.
  9. To serve, plate rice with a generous scoop of chicken stroganoff. Add garlic naan and crispy fries on the side. Enjoy warm.
