Ingredients

- 1 medium onion, chopped

- 3/4 cup sour cream
- 1 cup chicken broth
- 1 tbsp Dijon mustard
- 1 tsp paprika
- 2 tbsp olive oil or butter
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
- 1.5 cups basmati or jasmine rice
- 4 garlic naan (store-bought or homemade)
- 1 lb frozen or fresh-cut fries
- Oil, for frying or baking fries
- Optional: melted butter + minced garlic for brushing naan
Instructions
In a large skillet, heat olive oil or butter over medium heat. Sauté chopped onion for 3–4 minutes until soft, then add garlic and cook for 1 more minute.
- Add mushrooms and cook until browned and moisture evaporates, about 6–8 minutes.
- Push mushrooms to the side, add chicken pieces, and cook until golden and cooked through, about 6–7 minutes.
- Sprinkle in paprika, salt, and pepper. Stir to combine.
- Pour in chicken broth, bring to a simmer, and cook for 5–7 minutes until slightly reduced.
- Lower heat and stir in sour cream and Dijon mustard. Simmer gently for 3–4 minutes until creamy. Adjust seasoning and garnish with parsley.
- While stroganoff cooks, prepare rice according to package instructions. Fluff and keep warm.
- Warm garlic naan in a skillet or oven. Optional: brush with melted butter and garlic.
- Cook fries according to package or homemade instructions by frying or baking. Season with salt immediately after cooking.
- To serve, plate rice with a generous scoop of chicken stroganoff. Add garlic naan and crispy fries on the side. Enjoy warm.
