Creamy Tuscan Shrimp is a rich one-pan dish featuring shrimp simmered in a garlic-Parmesan cream sauce with sun-dried tomatoes, spinach, and Italian herbs. It’s comforting, flavorful, and comes together in under 30 minutes.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, drained and chopped
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 1–2 minutes per side until pink and opaque. Remove from skillet and set aside.
- In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant.
- Add sun-dried tomatoes and cook for 1 minute.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and Italian seasoning. Simmer for 2–3 minutes until slightly thickened.
- Add spinach and stir until wilted.
- Return shrimp to the skillet and cook for 1–2 more minutes, allowing flavors to meld. Season with salt, pepper, and red pepper flakes as desired.
- Serve immediately over pasta, rice, or with crusty bread.

- Use large or jumbo shrimp for best results.
- Do not overcook the shrimp to maintain tenderness.
- Add mushrooms for an extra savory element.
- For a dairy-free option, use coconut cream and vegan Parmesan.
- Thicken the sauce by simmering longer or adding more Parmesan.
