Description

Crispy Cheddar Chicken is a delicious and easy-to-make dish with a crispy breading, rich cheddar cheese, and tender chicken. Perfect for a weeknight dinner or special occasions.


Ingredients

4 boneless, skinless chicken breasts

1 cup crushed cornflakes

1 cup shredded cheddar cheese

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup butter, melted

1 tablespoon fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or spray it with non-stick cooking spray.
  2. In a shallow dish, combine the crushed cornflakes, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Stir well to combine.
  3. In another shallow dish, place the flour. In a third shallow dish, beat the eggs.
  4. Dip each chicken breast into the flour, coating it evenly. Then, dip it into the beaten eggs, followed by the cornflake and cheddar mixture. Press down gently to ensure the coating sticks well.
  5. Place the coated chicken breasts onto the prepared baking sheet.
  6. Drizzle the melted butter over the top of the chicken breasts.
  7. Bake in the preheated oven for 25-30 minutes or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).
  8. Once cooked, remove from the oven and let it rest for a few minutes before serving.
  9. Garnish with freshly chopped parsley if desired, and enjoy!

  1. For a spicy twist, add a pinch of cayenne pepper or chili powder to the cornflake mixture.
  2. Use gluten-free cornflakes and flour blend for a gluten-free version of this recipe.
