Description
A refreshing Cucumber Feta Salad that combines the crispness of cucumbers with creamy feta cheese, perfect as a light side dish or snack.
Ingredients
2 medium cucumbers, sliced
1 cup crumbled feta cheese
1/2 red onion, thinly sliced
1/2 cup cherry tomatoes, halved
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon dried oregano
Salt and pepper, to taste
Instructions
- Wash and slice the cucumbers into thin rounds. Optionally peel them for extra crunch.
- In a large bowl, combine the sliced cucumbers, crumbled feta cheese, sliced red onion, and halved cherry tomatoes.
- In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste.
- Pour the dressing over the salad and toss gently to combine, ensuring the ingredients are well-coated.
- Let the salad sit for a few minutes to allow the flavors to meld together before serving.
Notes
- Add Kalamata olives for a Mediterranean flair.
- For extra protein, add grilled chicken, shrimp, or chickpeas.
- Use fresh herbs like basil, mint, or parsley instead of dried oregano.
- For a dairy-free version, replace feta with a plant-based cheese alternative or omit it for a vegan version.
- Store leftovers in an airtight container in the fridge for up to 2 days.
