Description

A refreshing Cucumber Feta Salad that combines the crispness of cucumbers with creamy feta cheese, perfect as a light side dish or snack.

Ingredients

2 medium cucumbers, sliced

1 cup crumbled feta cheese

1/2 red onion, thinly sliced

1/2 cup cherry tomatoes, halved

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions

  1. Wash and slice the cucumbers into thin rounds. Optionally peel them for extra crunch.
  2. In a large bowl, combine the sliced cucumbers, crumbled feta cheese, sliced red onion, and halved cherry tomatoes.
  3. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste.
  4. Pour the dressing over the salad and toss gently to combine, ensuring the ingredients are well-coated.
  5. Let the salad sit for a few minutes to allow the flavors to meld together before serving.

Notes

  1. Add Kalamata olives for a Mediterranean flair.
  2. For extra protein, add grilled chicken, shrimp, or chickpeas.
  3. Use fresh herbs like basil, mint, or parsley instead of dried oregano.
  4. For a dairy-free version, replace feta with a plant-based cheese alternative or omit it for a vegan version.
  5. Store leftovers in an airtight container in the fridge for up to 2 days.
