Description

These Date Mounds Bars are a deliciously simple treat combining soft Medjool dates stuffed with creamy coconut butter, coated in rich dark chocolate, and topped with flaky sea salt. Perfect as a wholesome snack or an indulgent dessert, they’re naturally sweet, gluten-free, and easy to prepare with minimal ingredients.


Ingredients

Dates and Filling

  • 15 Medjool dates, pitted
  • 3 tablespoons coconut butter, melted (homemade or store-bought)
  • 3 tablespoons unsweetened desiccated coconut (plus extra for topping)

Chocolate Coating

  • 1 cup dark chocolate chips (Enjoy Life brand recommended for dairy-free)
  • 1 teaspoon coconut oil

Topping

  • Flaky sea salt, for sprinkling


Instructions

  1. Prepare Dates: Slice each Medjool date down the center lengthwise and carefully remove the pit.
  2. Stuff Dates: Spoon about ¼ to ½ teaspoon of melted coconut butter into the cavity of each date.
  3. Add Coconut: Sprinkle approximately ½ teaspoon of unsweetened desiccated coconut on top of the coconut butter inside the date, then close the date back up to enclose the filling.
  4. Melt Chocolate: Place the dark chocolate chips and coconut oil into a microwave-safe bowl. Microwave for 1 minute until the chips are mostly melted, then stir thoroughly until smooth and fully melted. Alternatively, melt over low heat on the stovetop.
  5. Dip Dates: Dip each stuffed date into the melted chocolate, using a spoon or fork to coat completely, then place on a piece of parchment paper.
  6. Top and Chill: Sprinkle flaky sea salt or additional shredded coconut on top of each chocolate-coated date, then refrigerate for 30 to 45 minutes to allow the chocolate to set.
  7. Serve and Store: Remove from the refrigerator and serve. Store any leftovers in an airtight container in the fridge or freezer for freshness.
