Base & Batter
- 9 whole graham crackers
- 10 tablespoons salted butter
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup milk chocolate chips (melted)
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
Topping
- 2-3 whole Hershey’s chocolate bars
- 10 ounces mini marshmallows
Instructions
- Preheat and Prepare Pan: Preheat oven to 350°F (175°C). Line a 9×9-inch metal baking pan with parchment paper, leaving overhang on the sides to easily lift out the brownies later.
- Layer Graham Crackers: Arrange half of the whole graham crackers evenly on the bottom of the prepared pan to form a solid base layer.
- Melt Butter: In a microwave-safe bowl, melt 10 tablespoons of salted butter in 30-second increments until fully melted and smooth. Transfer melted butter to a large mixing bowl.
- Mix Wet Ingredients: Whisk granulated sugar into the melted butter until smooth, about 30 seconds. Add the eggs and vanilla extract, whisking vigorously for 1 minute until the mixture is glossy and well combined. Then whisk in the melted milk chocolate chips until fully incorporated.
- Add Dry Ingredients: Gently fold in the all-purpose flour, unsweetened cocoa powder, and salt using a rubber spatula. Mix just until combined, being careful not to overmix to maintain brownie fudginess.
- Assemble Batter: Pour the prepared brownie batter over the graham cracker layer in the pan and spread evenly with a spatula.
- Bake Brownies: Bake in the preheated oven for 30–35 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs (not wet batter).
- Prepare Toppings: While brownies bake, break the remaining graham crackers and Hershey’s chocolate bars into bite-sized pieces to use as topping.
- Add Toppings: Remove the baked brownies from the oven. Evenly sprinkle the broken graham crackers, chocolate chunks, and mini marshmallows over the top.
- Broil to Toast Marshmallows: Return the pan to the oven, placing it about 8 inches below the broiler. Broil on high for 1–2 minutes, watching very closely until the marshmallows are golden brown and toasted.
- Cool and Serve: Remove from oven and allow the brownies to cool slightly before slicing and serving to enjoy gooey, toasted s’mores brownies.
