No-bake, layered dessert bars inspired by Disneyland’s famous Peanut Butter Sandwich, featuring graham crackers, a peanut butter filling, and a rich chocolate coating—perfect for homemade enjoyment.
Ingredients
14 whole graham cracker sheets
2 cups creamy peanut butter
8 tablespoons butter, softened
2 teaspoons vanilla extract
½ teaspoon salt
3½ cups powdered sugar
4 tablespoons shortening (or substitute vegetable oil)
4 cups semi-sweet chocolate chips
Instructions
- Line a 9×13-inch (or 8½×11-inch) glass baking dish with parchment or foil, and spray it lightly with non-stick spray.
- Place 2 graham crackers in a sealed bag and crush into crumbs. Set aside.
- In a bowl, blend peanut butter, softened butter, vanilla, and salt. Gradually stir in powdered sugar until the mixture is thick and easily forms a ball.
- In a microwave-safe bowl, combine chocolate chips and shortening; heat in 30-second intervals, stirring until smooth.
- Arrange half the graham crackers (≈6 sheets) in the pan. Spread one-third of the melted chocolate over them.
- Flatten fistfuls of the peanut butter mixture and spread evenly over the chocolate.
- Layer remaining crackers atop the peanut butter, pour remaining chocolate over the top, and sprinkle with reserved graham cracker crumbs.
- Refrigerate for at least 1 hour until set, then slice into bars of your preferred size.
Notes
- Crunchy peanut butter: Swap creamy PB for crunchy to add texture.
- Nut butter substitutes: Try almond butter—but note different consistency may slightly alter texture.
- Chocolate variations: Use dark, milk, or white chocolate chips for different flavor profiles.
- No shortening? Replace with 1 tbsp vegetable oil to achieve smooth, spreadable melted chocolate.
- Store bars in an airtight container for up to 1 week. Let them soften a few minutes at room temperature before serving.
- Freeze in sealed container for up to 3 months. Thaw in the refrigerator before enjoying.
