Description

This delightful Easter Carrot Patch Traybake combines a rich chocolate traybake cake topped with creamy chocolate icing, Oreo crumbs, and whimsical carrot-shaped strawberries dipped in orange-colored white chocolate for a festive spring treat that’s perfect for sharing.

Ingredients

Carrot Chocolate Strawberries

  • 250 g White chocolate
  • Few drops Orange food colouring
  • 12 Strawberries, washed and patted dry

Traybake Cake

  • 250 g Butter, softened
  • 250 g Caster sugar
  • 1 Teaspoon Vanilla extract
  • 4 Medium Eggs
  • 220 g Self-raising flour
  • 30 g Cocoa powder
  • 2-3 Tablespoons Milk

Topping

  • 190 g Icing sugar
  • 1 Tablespoon Cocoa powder
  • 1-2 Tablespoons Milk
  • ½ Pack Oreos, crushed into crumbs (about 7 Oreos)

Instructions

  1. Prepare Chocolate Strawberries: Melt the white chocolate gently until smooth, then stir in a few drops of orange food colouring until evenly combined, achieving a bright orange hue.
  2. Dip Strawberries: Dip each washed and dried strawberry into the orange chocolate coating to cover them fully. Place the dipped strawberries on a lined baking tray.
  3. Set Strawberries: Drizzle any remaining orange chocolate over the strawberries for added decoration and pop the tray into the fridge for about 1 hour to let the chocolate set firmly.
  4. Preheat Oven and Prepare Tin: Preheat your oven to 180°C/350°F (160°C/320°F for fan/convection ovens) and line an 8×10-inch baking tin with baking paper.
  5. Make Cake Batter: In a large bowl, cream the softened butter and caster sugar together until light and fluffy. Stir in the vanilla extract thoroughly.
  6. Incorporate Wet and Dry Ingredients: Whisk in the eggs one at a time, then gradually fold in the self-raising flour, cocoa powder, and a little milk (2-3 tablespoons), mixing gently until you achieve a smooth, even cake batter.
  7. Bake the Cake: Pour the batter evenly into the lined tin and bake in the preheated oven for 25 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool Cake: Allow the cake to cool in the tin for about 10 minutes before turning it out onto a wire rack to cool completely.
  9. Prepare Icing: Combine the icing sugar, cocoa powder, and milk (1-2 tablespoons) in a bowl to create a smooth chocolate icing.
  10. Ice the Cake: Spread the chocolate icing evenly over the cooled cake, then sprinkle the crushed Oreo crumbs on top while the icing is still wet so they adhere well.
  11. Decorate with Strawberries: Use a small dot of leftover icing to stick the chocolate ‘carrot’ strawberries atop the cake as a festive decoration.
  12. Set and Serve: Allow the icing to harden fully before cutting the cake into 12 slices. Enjoy your festive Easter carrot patch traybake!

Notes

  • Orange food colouring is optional but adds a fun and festive carrot color to the strawberries.
  • Ensure strawberries are completely dry before dipping to help the chocolate coat evenly.
  • You can adjust the milk quantity in the cake batter and icing to achieve the desired consistency.
  • The crushed Oreos add texture and a cookies-and-cream twist to the chocolate icing.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
