  • 4 medium bananas (cut lengthwise, then into halves to get 4 strips per banana)
  • 7 oz canned ripe jackfruit, drained and sliced (200 grams, optional)
  • 16 spring roll wrappers
  • 1/2 teaspoon cinnamon

For Serving (Optional)

  • Vanilla ice cream
  • Agave syrup, maple syrup, or caramel sauce


Instructions

  1. Prepare the wrapper: Lay out one spring roll wrapper with the corners pointing towards the top, bottom, left, and right, forming a diamond shape.
  2. Add cinnamon: Sprinkle a bit of cinnamon onto the middle of the spring roll wrapper.
  3. Place the banana: Coat one banana strip with cinnamon and place it in the center of the wrapper.
  4. Add jackfruit (optional): If using, add some sliced jackfruit on top of the banana strip.
  5. Fold the wrapper: Fold the left and right sides inward, then fold the bottom part of the wrapper up towards the center.
  6. Roll and finish: Roll the wrapper to form one spring roll, then smear the top part with a little more cinnamon for color and flavor. Repeat for all rolls.
  7. Cook the spring rolls: Air fry the spring rolls at 200°C (390℉) for 12 minutes until golden brown. Alternatively, pan fry them in a skillet until golden brown on all sides.
  8. Serve: Enjoy the banana spring rolls as is, or serve with a scoop of vanilla ice cream and a drizzle of maple syrup or caramel sauce for added sweetness.
