Description

A classic and easy-to-make strawberry shortcake recipe using Bisquick mix, fresh strawberries, and whipped cream. Perfect for a summer dessert, this recipe features juicy macerated strawberries, tender homemade biscuits, and fluffy whipped cream assembled into delightful shortcakes.

Ingredients

Strawberries

  • 1 quart strawberries, sliced
  • ½ cup sugar (for strawberries)

Biscuit Dough

  • 2 ⅓ cups Original Bisquick Mix
  • ⅓ cup milk
  • 3 tablespoons sugar (for biscuit dough)
  • 4 tablespoons butter, melted

Topping

  • Sugar (for sprinkling on biscuit tops)
  • ½ cup whipped cream

Instructions

  1. Prep the Strawberries: In a medium bowl, stir together the sliced strawberries and ½ cup of sugar. Let them sit at room temperature for about 1 hour to macerate and become juicy.
  2. Preheat the Oven: Set your oven to 425°F (220°C) to get it ready for baking the biscuits.
  3. Make the Biscuit Dough: In another medium bowl, mix the Bisquick mix, milk, 3 tablespoons of sugar, and melted butter until a soft dough forms. Be careful not to overmix to keep the biscuits tender.
  4. Shape and Bake the Biscuits: Drop the dough by rounded tablespoonfuls onto an ungreased cookie sheet, forming 6 mounds. Sprinkle a little extra sugar on top of each. Bake for 10 to 12 minutes or until the tops are golden brown.
  5. Assemble the Shortcakes: Start by placing one biscuit on a plate, add a few dollops of whipped cream, and then a layer of the macerated strawberries. Place another biscuit on top and repeat the layers.
  6. Finish and Serve: Top the assembled shortcake with more whipped cream and a strawberry on top. Drizzle some of the extra strawberry juice around the plate for added flavor and presentation.

Notes

  • Do not overmix the biscuit dough to ensure tender shortcakes.
  • Allow the strawberries to macerate for at least 1 hour for maximum juiciness and flavor.
  • You can adjust the sugar amount based on the sweetness of your strawberries.
  • Serve immediately after assembling to enjoy the biscuits warm and fresh.
  • Optional: You can substitute whipped cream with coconut cream for a dairy-free version.
