Made with melted butter, brown sugar, vanilla, and plenty of chocolate chips, it’s baked directly in a cast iron skillet for a crispy edge and soft center. Optional M&M’s add a festive touch, making it ideal for celebrations or cozy nights in.
Ingredients
Cookie Dough
- 1 cup butter
- 1 1/2 cups brown sugar
- 2 tsp vanilla extract
- 2 eggs
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips (milk, semi-sweet, chunks, or a mix)
- 1/2 cup M&M’s (optional, for a festive Valentine’s version)
Instructions
- Preheat and melt butter: Preheat your oven to 350°F (175°C). Place the butter in a cast iron skillet and allow it to melt in the oven. Carefully remove the skillet and pour the melted butter into a mixing bowl.
- Mix sugar and vanilla: Stir the brown sugar and vanilla extract into the melted butter until fully combined.
- Add eggs: Add the eggs to the butter mixture and mix well until smooth.
- Combine dry ingredients: Add the all-purpose flour, baking soda, and salt to the wet ingredients. Mix just until the dough comes together; avoid overmixing to keep the cookie tender.
- Fold in chocolate chips: Gently fold in the chocolate chips evenly throughout the dough.
- Prepare skillet and add dough: Press the cookie dough evenly into the cast iron skillet. Sprinkle the top with M&M’s and extra chocolate chips if desired for a colorful, festive touch.
- Bake the cookie: Place the skillet in the oven and bake for 20-25 minutes, until the edges turn golden brown and the center is just set but still soft and gooey.
- Cool and serve: Allow the skillet cookie to cool slightly in the skillet, then slice into wedges and serve warm. Enjoy the ultimate gooey skillet cookie experience.
Notes
- Ensure you do not overbake to maintain a soft, gooey center.
- If you don’t have a cast iron skillet, use an oven-safe skillet or baking dish of similar size.
- Allow the cookie to cool a few minutes before slicing to set the structure.
- For a dairy-free version, substitute butter with vegan butter.
- This recipe can be doubled if you have a larger skillet or to bake in two skillets separately.
