Description

This Easy Coconut Fudge is a rich and creamy chocolate treat blended with sweetened and toasted coconut flakes for a delightful texture and flavor. Made with a combination of dark and milk chocolate chips, sweetened condensed milk, and a touch of vanilla or coconut extract, this no-bake fudge is simple to prepare and perfect for satisfying your sweet cravings. Chilled to perfection, these fudge squares are ideal for gifting or enjoying as a decadent dessert.

Ingredients

Chocolate Mixture

  • 1 cup dark chocolate chips (or semi-sweet chocolate chips)
  • 2 cups milk chocolate chips
  • 14 ounces sweetened condensed milk
  • 1 teaspoon vanilla extract (or coconut extract)

Coconut Flakes

  • ¾ cup sweetened coconut flakes (reserve 2 tablespoons for topping)
  • ¾ cup toasted coconut flakes (reserve 2 tablespoons for topping)

Instructions

  1. Prepare Pan: Line an 8-inch baking pan with parchment paper to prevent sticking and make it easy to remove the fudge once set.
  2. Melt Chocolate: Combine the milk chocolate chips, dark chocolate chips, and sweetened condensed milk in a microwave-safe bowl. Heat in the microwave in three 30-second increments, stirring thoroughly after each to ensure even melting. If needed, heat for an additional 15-30 seconds until smooth and fully combined.
  3. Add Flavor and Coconut: Stir in the vanilla or coconut extract until the mixture is smooth. Then fold in the toasted and sweetened coconut flakes, making sure they are evenly distributed throughout the chocolate mixture.
  4. Set Fudge: Pour the combined fudge mixture into the prepared baking pan, spreading it evenly with a spatula. Sprinkle the reserved toasted and sweetened coconut flakes on top for added texture and visual appeal.
  5. Chill: Place the pan in the refrigerator and chill until firm, ready to serve. When ready to slice, allow the fudge to sit at room temperature for 5-10 minutes to soften slightly, making it easier to cut clean squares.
  6. Store: Cut into squares using a sharp knife and store in an airtight container in the refrigerator. The fudge will keep fresh for up to one week.

Notes

  • Use parchment paper for easy removal and cleaner edges.
  • Adjust the type of chocolate chips according to your sweetness preference (dark or semi-sweet).
  • To toast coconut flakes, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, stirring occasionally until golden brown.
  • Let fudge sit at room temperature before slicing to prevent cracking.
  • Store fudge in a cool place or refrigerator to maintain texture and freshness.
