Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a metal loaf pan with nonstick spray and line it with a sheet of parchment paper for easy removal.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.
- Mix Wet Ingredients: In a separate medium bowl, whisk the room temperature eggs, Lifeway plain kefir, vegetable oil, and vanilla extract until fully blended and smooth.
- Combine Wet and Dry: Pour the wet ingredient mixture into the dry ingredients and stir gently until there are still a few dry streaks remaining; avoid overmixing to keep the cake tender.
- Add Hot Water: While stirring gently, gradually add the hot water and combine until the batter is uniformly mixed but do not overwork the batter.
- Add Chocolate Chips (Optional): Fold in ¼ cup of chocolate chips evenly into the batter to add pockets of melted chocolate throughout.
- Transfer to Pan: Pour the batter into the prepared loaf pan and smooth the surface with a spatula. Sprinkle the remaining ¼ cup of chocolate chips evenly over the top for an extra chocolatey crust.
- Bake: Place the loaf pan on the middle rack and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs.
