Instructions

  1. Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly mixed.
  2. Mix Wet Ingredients: In a separate medium bowl, whisk together almond milk, egg, and melted butter or oil until smooth.
  3. Combine Wet and Dry Mixtures: Add the wet ingredients to the dry ingredients and mix until just combined. A few lumps in the batter are okay. Gently fold in half of the sliced strawberries. If the batter feels too thick, add milk a tablespoon at a time to reach a slightly thinner consistency.
  4. Heat the Skillet: Preheat a nonstick skillet over medium-low heat and lightly brush with butter or oil to prevent sticking.
  5. Cook Pancakes: Using a ⅓ cup scoop, pour batter onto the skillet. Cook each pancake for 1 to 2 minutes per side or until they puff up, turn golden brown, and are cooked through. Adjust the heat to low as needed to avoid burning before the center is cooked.
