Description

This Easy Low Carb Chicken Casserole is a quick and delicious dish perfect for a family meal or meal prep. Combining tender cooked chicken, crispy bacon, and your choice of fresh broccoli or well-drained frozen spinach, all mixed with garlic, ranch dressing, and a blend of mozzarella and cheddar cheeses. Baked to bubbly perfection, it offers a comforting, flavorful, and low carb option that’s simple to prepare in about 30 minutes.

Ingredients

Protein and Vegetables

  • 4 cups diced or shredded cooked chicken breast
  • 8 slices cooked and chopped bacon
  • 5 cups broccoli florets OR 1 pound thawed frozen spinach (well-drained)
  • 3 cloves minced garlic

Dressing and Cheese

  • 1 cup ranch dressing
  • 1/2 cup shredded mozzarella cheese (for mixing)
  • 1/2 cup shredded cheddar cheese (for mixing)
  • 1/2 cup shredded mozzarella cheese (for topping)
  • 1/2 cup shredded cheddar cheese (for topping)

Instructions

  1. Preheat and Prep Vegetables: Preheat your oven to 375°F (191°C). If using frozen spinach, thaw it completely and squeeze out any excess water to prevent sogginess. If using fresh broccoli, boil the florets for 1 to 2 minutes until they become bright green, then drain thoroughly.
  2. Combine Ingredients: In a large mixing bowl, combine the diced chicken, chopped bacon, prepared broccoli or spinach, minced garlic, ranch dressing, and half of the shredded mozzarella and cheddar cheeses. Mix everything well to ensure even distribution. You can optionally add ranch seasoning to enhance flavor. To minimize cleanup, you can mix all ingredients directly in the casserole dish.
  3. Transfer to Casserole Dish: Pour and spread the mixture evenly into a 9×13 inch (23×33 cm) casserole dish, ensuring it’s well distributed for even cooking.
  4. Add Cheese Topping: Sprinkle the remaining mozzarella and cheddar cheeses evenly over the top of the casserole for a delicious cheesy crust.
  5. Bake and Serve: Bake the casserole in the preheated oven for about 15 minutes, or until the top is hot, melted, and bubbly. Remove it from the oven, allow it to cool slightly, then serve warm.

Notes

  • You can substitute either fresh broccoli or frozen spinach depending on your preference or what’s available.
  • Drain the spinach thoroughly to avoid excess moisture in the casserole.
  • Using precooked chicken and bacon saves preparation time.
  • Feel free to add ranch seasoning or other herbs to enhance the flavor.
  • This casserole can be prepared ahead of time and refrigerated before baking.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
