Ingredients

Pumpkin Cream Layer

  • 16 oz cream cheese or mascarpone (softened)
  • 1/2 cup powdered sugar or brown sugar
  • 1 can (15 oz) pumpkin puree
  • 1 1/2 teaspoons pumpkin spice
  • 1 teaspoon cinnamon
  • 1 1/2 cups whipped cream (for folding into pumpkin mixture)

  • 1 package (7 oz) Savoiardi ladyfingers (Champagne biscuits)
  • 1 bottle (11.5 oz) Premier coffee latte protein shake or strong coffee/latte of choice

Instructions

  1. Prepare Pumpkin Cream: In a large bowl, beat the softened cream cheese or mascarpone until smooth and creamy. Add the powdered or brown sugar, pumpkin puree, pumpkin spice, and cinnamon, mixing thoroughly until the mixture is well combined and smooth.
  2. Fold in Whipped Cream: Gently fold 1 1/2 cups of whipped cream into the pumpkin mixture to create a light and fluffy pumpkin cream layer. Be careful to maintain the airy texture.
  3. Dip Ladyfingers: Pour the coffee latte or strong coffee into a shallow bowl. Quickly dip each ladyfinger on both sides, just long enough to moisten without soaking, to maintain their structure.
  4. First Layer: Line the bottom of an 8- or 9-inch square dish with the dipped ladyfingers in a single layer, covering the base evenly.
  5. Spread Pumpkin Cream: Spread half of the prepared pumpkin cream over the ladyfingers, smoothing it out evenly to create the first creamy layer.
  6. Second Layer: Repeat the process by dipping another batch of ladyfingers and placing them on top of the pumpkin cream layer. Then spread the remaining pumpkin cream evenly over the ladyfingers.
  7. Top with Whipped Cream: Spread the remaining 1 1/2 cups of whipped cream on top as the final layer, creating a smooth and creamy topping.
