Ingredients
- 3 cups cooked chicken, shredded or cubed
- 12 oz rotini or penne pasta
- 1 (10 oz) can diced tomatoes with green chilies (e.g., Rotel)
- 1 (10.5 oz) can cream of chicken soup
- 1 cup sour cream
- 1 packet (1 oz) taco seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn (frozen or canned, drained)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 green onions, chopped (optional, for garnish)
- 2 tbsp fresh cilantro, chopped (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a large bowl, mix together the cooked chicken, diced tomatoes with green chilies, cream of chicken soup, sour cream, taco seasoning, black beans, and corn.
- Stir in the cooked pasta until evenly combined.
- Add half of the cheddar and Monterey Jack cheeses to the mixture and stir well.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Top with the remaining cheeses.
- Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly.
- Garnish with green onions and cilantro if desired.
- Serve warm and enjoy!
