Instructions
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
- Mix Wet Ingredients: In a small bowl, whisk the large room temperature egg, Lifeway Plain Lowfat Kefir, and maple syrup thoroughly to blend.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently with a spatula just until combined. Some lumps are fine and will help keep the pancakes fluffy.
- Preheat Pan: Warm a skillet or griddle over medium-low heat and lightly grease the surface with butter to prevent sticking.
- Cook Pancakes: Pour ¼ cup of batter per pancake onto the preheated pan. Cook for about 2 minutes until bubbles form on the surface and edges begin to set, then flip carefully. Cook the other side for an additional 1 minute or until both sides are golden brown. Adjust the heat as necessary to avoid burning.
