Ingredients
Puff Pastry
- 1 sheet puff pastry (thawed but cold)
Filling
- ½ cup blueberry or blackberry preserves
- 16 ounces fresh blackberries
- ⅓ cup granulated sugar
- 1 tablespoon flour
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar (divided)
Egg Wash
- 1 egg
- 1 tablespoon water
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent the strudel from sticking during baking.
- Preheat Oven: Set your oven to 400 degrees Fahrenheit to ensure it’s ready for baking.
- Make Egg Wash: In a small bowl, beat together the egg and water with a fork; set aside for brushing the pastry.
- Mix Blackberry Filling: In a mixing bowl, gently combine fresh blackberries, sugar, flour, and vanilla extract to coat the berries evenly.
- Roll Puff Pastry: On a floured surface, unfold the puff pastry sheet and roll it out to a 12 by 14-inch rectangle using a floured rolling pin.
- Transfer Pastry: Move the rolled pastry onto the prepared baking sheet carefully.
- Warm Preserves: Heat the blackberry or blueberry preserves in a microwave-safe dish for about 10 seconds to soften.
- Spread Preserves: Spoon the warmed preserves down the center lengthwise of the puff pastry.
- Add Blackberry Mixture: Carefully spoon the blackberry mixture on top of the preserves, keeping it centered along the pastry.
- Cut Slits in Pastry: Along each long edge of the pastry, cut 3-inch long slits spaced about one inch apart.
- Fold Strips: Starting at the top, fold the pastry strips over the blackberry filling, alternating sides and overlapping slightly to enclose the filling.
- Brush and Sugar: Brush the top of the strudel with egg wash, then sprinkle the remaining 2 tablespoons of sugar evenly for a sweet crust finish.
- Bake: Place the baking sheet in the oven and bake for 21 to 23 minutes or until the pastry is golden brown and crisp.
- Cool: Allow the strudel to cool for 10 to 15 minutes on the baking sheet before slicing and serving to let the filling set.
Notes
- Ensure the puff pastry is cold but thawed to make rolling easier and to maintain flakiness.
- Be gentle when mixing berries to avoid crushing them and keep the texture intact.
- You can substitute blackberries with blueberries or mixed berries for different flavor variations.
- Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or whipped cream.
- Leftovers can be stored covered in the refrigerator for up to 2 days and reheated briefly in the oven for crispness.
