Description

Fresh Raspberry Tiramisu is a delightful twist on the classic Italian dessert. The tangy sweetness of fresh raspberries contrasts beautifully with the creamy mascarpone filling, creating a dessert that is both indulgent and refreshing.

Ingredients

1 pound fresh raspberries

1 1/2 cups heavy cream

8 oz mascarpone cheese

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup strong brewed coffee, cooled

24 ladyfingers (savoiardi)

Cocoa powder for dusting (optional)

Instructions

  1. Start by preparing the whipped cream. In a large bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
  2. In a separate bowl, whisk together the mascarpone cheese and vanilla extract until smooth and creamy.
  3. Gently fold the whipped cream into the mascarpone mixture, creating a light and airy filling.
  4. Prepare a shallow dish and pour the cooled brewed coffee into it.
  5. Quickly dip each ladyfinger into the coffee, making sure not to soak them too long. Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
  6. Spoon half of the mascarpone mixture over the ladyfingers and spread it evenly.
  7. Scatter half of the fresh raspberries on top of the mascarpone layer.
  8. Repeat the process with another layer of dipped ladyfingers, mascarpone filling, and fresh raspberries.
  9. Finish with a final layer of raspberries on top.
  10. Cover the tiramisu and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
  11. Before serving, dust the top with cocoa powder for a touch of elegance (optional).

Notes

  1. Berry Medley: Swap the raspberries for a mix of strawberries, blueberries, or blackberries for a different berry twist.
  2. Alcoholic Version: Add a tablespoon of liqueur like Chambord, Amaretto, or Marsala wine to the coffee for an added depth of flavor.
  3. Vegan Option: Use a plant-based whipped cream and dairy-free mascarpone to make this dessert vegan-friendly.
  4. Storage: Store any leftovers in an airtight container in the refrigerator. The tiramisu will stay fresh for up to 3 days.
  5. Reheating: Tiramisu is best served chilled, so there’s no need to reheat it. Just take it out of the fridge and enjoy it cold.
