Ingredients

Pie Crust

  • 1 recipe 9-inch pie crust (blind baked and cooled)

Filling

  • 4 cups fresh strawberries, hulled (divided)
  • ¾ cup granulated sugar
  • ¼ cup water
  • 2 tbsp fresh lemon juice
  • 3 tbsp cornstarch
  • Red food coloring (optional)


Instructions

  1. Assemble the strawberries: Add 2 cups of the hulled fresh strawberries to the fully-baked pie crust and set aside, creating the base layer for the pie filling.
  2. Cook the filling: In a medium saucepan, combine the remaining 2 cups of strawberries, granulated sugar, water, fresh lemon juice, and cornstarch. Using an old-fashioned potato masher, mash the strawberries until the mixture is mostly liquid with some berry chunks remaining. Place the saucepan over medium heat and cook, stirring occasionally, for 3-5 minutes until the mixture starts bubbling around the edges. Once bubbling, stir constantly until the filling thickens and bubbles throughout, about 3 minutes. Remove from heat and stir in red food coloring if desired for enhanced color.
  3. Fill the pie: Immediately pour the thickened strawberry filling over the fresh strawberries layered in the pie crust. Allow the pie to cool to room temperature, approximately 1 hour, then refrigerate for 4-6 hours until fully chilled and set. Serve cold, optionally topped with fresh whipped cream.
