Ingredients

Dough

  • 2 1/2 cups all-purpose flour
  • 1/4 cup dark brown sugar
  • 2 sticks salted butter (cold)
  • 1 tablespoon vanilla extract
  • 1/3 cup cold water (plus 1-2 tablespoons additional as needed)

Filling

  • 1 jar strawberry jam (around 1 1/2 cups)
  • 1/4 cup dark brown sugar
  • 2 teaspoons all-purpose flour
  • 1 tablespoon ground cinnamon
  • 2 tablespoons salted butter, melted

Frosting

  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1-4 tablespoons water (to thin as needed)


Instructions

  1. Make the dough: In a bowl, use an electric mixer to beat together the 2 1/2 cups flour, 1/4 cup dark brown sugar, and 2 sticks of cold salted butter until crumbly. Add 1 tablespoon vanilla extract and 1/3 cup cold water. Beat until just combined, adding 1-2 tablespoons more water as needed until the dough forms a cohesive ball.
  2. Prepare the pan and dough: Preheat the oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper. Divide the dough in half. Press half the dough evenly into the bottom of the prepared baking dish. On a separate parchment sheet, trace a 9×9 inch square. Roll out the remaining dough just beyond the traced edges and set aside this rolled slab.
  3. Make the filling: Spread the strawberry jam evenly over the dough base in the pan. In a bowl, combine 1/4 cup dark brown sugar, 2 teaspoons flour, 1 tablespoon cinnamon, and 2 tablespoons melted butter. Evenly sprinkle or spread this cinnamon filling mixture over the jam layer.
  4. Top and trim the bars: Carefully invert the rolled-out dough slab over the filling in the pan, gently pressing down to secure it. Trim any excess dough around the edges to create a neat square.
  5. Chill and bake: Freeze the assembled bars for 15 minutes to set the dough. Bake in the preheated oven for 45 to 50 minutes until the center is set and the top is lightly golden. Remove from oven and allow to cool completely in the pan.
  6. Prepare the frosting: In a bowl, whisk together 1 cup powdered sugar, 2 tablespoons maple syrup, 1 tablespoon vanilla extract, and 1/2 teaspoon cinnamon. Add 1-2 tablespoons water and whisk until smooth. Add more water, up to 2 additional tablespoons, if frosting is too thick.
  7. Frost and serve: Drizzle the prepared frosting evenly over the cooled bars. Let the frosting dry and set. Once set, cut into 16 bars and serve. Store leftovers in an airtight container at room temperature for up to 3 days.
