Ingredients
Dry Ingredients
- 3 cups oats
- 1 cup brown sugar
- 2 tsp baking powder
- 1 tsp salt
- 1/2 tsp ground cinnamon
Wet Ingredients
- 2 large eggs (lightly beaten)
- 1 cup milk
- 1/2 cup butter (melted)
Fruits
- 3/4 cup peeled, chopped tart apple (such as Granny Smith)
- 1/3 cup chopped peaches (fresh or frozen)
- 1/3 cup blueberries (fresh or frozen)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking once your mixture is prepared.
- Mix dry ingredients: In a large bowl, combine the oats, brown sugar, baking powder, salt, and ground cinnamon. This creates the base for your baked oatmeal.
- Prepare the fruit: Dice the peeled tart apples and chop the peaches if not already done, ensuring they are ready to be added for even baking.
- Combine wet ingredients: In a separate bowl, whisk together the lightly beaten eggs, milk, and melted butter, creating a smooth liquid mixture to bind the oats and fruit.
- Combine all ingredients: Add the wet ingredients and chopped fruit to the bowl with the dry ingredients, stirring gently but thoroughly until everything is evenly mixed.
- Pour into baking dish: Grease an 8-inch baking dish and pour the oatmeal mixture into it, spreading it out evenly to prepare for baking.
- Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until a knife inserted near the center comes out clean and the top is lightly golden.
- Serve: Remove from oven and let it cool slightly before cutting into squares. Serve warm with a splash of milk if desired for a comforting breakfast or snack.
Notes
- You can substitute brown sugar with maple syrup or honey for a different sweetness profile.
- Frozen fruit can be used instead of fresh; just thaw and drain excess liquid before adding.
- Feel free to swap fruits or add nuts for texture and flavor variations.
- Leftovers can be refrigerated and reheated in the microwave for a quick breakfast.
- For dairy-free options, substitute milk with plant-based milk and butter with coconut oil or vegan butter.
