Description

Furr’s Lime Jello Salad is a refreshing, sweet-tart dessert salad perfect for potlucks and family gatherings. Combining lime gelatin with crushed pineapple, creamy cottage cheese, and light Cool Whip topping, this no-bake salad sets into a delightful, creamy treat with a crunchy pecan topping. Easy to prepare and chilled to perfection, this recipe offers a nostalgic, crowd-pleasing dish that’s ready in just over an hour.

Ingredients

Gelatin Mixture

  • 6 ounces Jello lime gelatin (2 small boxes)
  • 2 cups boiling water
  • 1 cup cold water

Salad Mix

  • 20 ounces canned crushed pineapple (drained)
  • 16 ounces small curd cottage cheese
  • 8 ounces Cool Whip whipped topping

Topping

  • 1/4 cup finely chopped pecans

Instructions

  1. Dissolve Gelatin: Place the lime gelatin powder into a large mixing bowl. Pour in the 2 cups of boiling water and stir thoroughly until the gelatin is completely dissolved.
  2. Add Cold Water: Stir in 1 cup of cold water to the gelatin mixture to bring it to room temperature and ready it for mixing with the other ingredients.
  3. Incorporate Pineapple and Dairy: Add the drained crushed pineapple, small curd cottage cheese, and Cool Whip whipped topping to the gelatin mixture.
  4. Blend Smoothly: Stir all the ingredients together carefully until the mixture is smooth and evenly combined, ensuring there are no large lumps of the whipped topping.
  5. Prepare to Set: Pour the blended mixture into a 9 x 13-inch pan, spreading it evenly across the surface.
  6. Add Pecan Topping: Sprinkle the finely chopped pecans evenly on top of the gelatin mixture for added texture and flavor.
  7. Chill and Set: Refrigerate the pan for at least 1 hour, or until the salad is fully set and firm to the touch.

Notes

  • Ensure the pineapple is well drained to avoid excess liquid which can make the salad too loose.
  • Use small curd cottage cheese for a smoother texture and milder flavor.
  • For a nut-free version, omit the pecans or substitute with toasted seeds like sunflower or pumpkin seeds.
  • Chilling time may vary depending on refrigerator settings; allow sufficient time for the gelatin to set completely.
  • This salad is best served chilled and can be stored in the refrigerator for up to 2 days.
