Ingredients

4 salmon fillets

2 tablespoons olive oil

3 tablespoons unsalted butter

4 cloves garlic, minced

8 ounces mushrooms, sliced

4 cups fresh spinach

1/2 cup heavy cream

1/2 cup chicken broth

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)


Instructions

  • Heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper.

  • Place the salmon fillets skin-side down in the skillet and cook for 4-5 minutes until crispy. Flip and cook for another 3-4 minutes until fully cooked. Remove salmon from the skillet and set aside.

  • In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute.

  • Add sliced mushrooms and cook for 4-5 minutes until browned and softened.

  • Stir in spinach and cook until wilted, about 2 minutes.

  • Pour in heavy cream and chicken broth, bringing the mixture to a simmer. Let it cook for 2-3 minutes until the sauce thickens.

  • Stir in Parmesan cheese, and season with salt and pepper.

  • Return the salmon fillets to the skillet, spooning sauce over them. Let simmer for 2-3 minutes.

  • Garnish with chopped parsley if desired and serve immediately.

Notes

  1. For a dairy-free option, substitute the heavy cream with coconut cream and use dairy-free butter.
  2. If you prefer a tangy twist, squeeze lemon juice over the salmon before serving.
  3. Spinach can be swapped for kale or Swiss chard for a variation in flavor and texture.
