Ingredients
2 cups carrots, peeled and cut into chunks
2 cups baby potatoes, halved or quartered
1 cup zucchini, cut into thick slices
1 cup bell peppers, chopped
3 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon dried oregano
1 tablespoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
