Ingredients
- 2 sheets gluten-free puff pastry
- 2 large apples (Granny Smith or Honeycrisp), peeled and thinly sliced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 2 cups whole milk (or dairy-free alternative)
- 4 large egg yolks
- 1/3 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- Pinch of salt
- Powdered sugar, for dusting (optional)
Instructions
Prepare the puff pastry: Thaw and roll out puff pastry sheets. Cut into even rectangles. Prick with a fork and bake at 400°F (200°C) for 12–15 minutes until golden. Cool completely.
- Caramelize the apples: In a skillet, melt butter. Add apple slices, brown sugar, and cinnamon. Cook 8–10 minutes until tender and caramelized. Let cool.
- Make the pastry cream: In a saucepan, whisk milk, sugar, cornstarch, salt, and egg yolks. Cook over medium heat, whisking constantly, until thick. Remove from heat, stir in vanilla, and chill.
- Assemble: On a serving plate, layer baked pastry, pastry cream, and apples. Repeat two more layers, ending with a pastry sheet on top.
- Chill and serve: Refrigerate for at least 1 hour. Dust with powdered sugar before serving, if desired.
