Description

Ingredients

  1. 2 sheets gluten-free puff pastry
  2. 2 large apples (Granny Smith or Honeycrisp), peeled and thinly sliced
  3. 2 tablespoons unsalted butter
  4. 2 tablespoons brown sugar
  5. 1/2 teaspoon ground cinnamon
  6. 2 cups whole milk (or dairy-free alternative)
  7. 4 large egg yolks
  8. 1/3 cup granulated sugar
  9. 2 tablespoons cornstarch
  10. 1 teaspoon vanilla extract
  11. Pinch of salt
  12. Powdered sugar, for dusting (optional)

Instructions

Prepare the puff pastry: Thaw and roll out puff pastry sheets. Cut into even rectangles. Prick with a fork and bake at 400°F (200°C) for 12–15 minutes until golden. Cool completely.

  1. Caramelize the apples: In a skillet, melt butter. Add apple slices, brown sugar, and cinnamon. Cook 8–10 minutes until tender and caramelized. Let cool.
  2. Make the pastry cream: In a saucepan, whisk milk, sugar, cornstarch, salt, and egg yolks. Cook over medium heat, whisking constantly, until thick. Remove from heat, stir in vanilla, and chill.
  3. Assemble: On a serving plate, layer baked pastry, pastry cream, and apples. Repeat two more layers, ending with a pastry sheet on top.
  4. Chill and serve: Refrigerate for at least 1 hour. Dust with powdered sugar before serving, if desired.
