Description

Delicious and easy-to-make gluten-free donuts, baked to perfection with a moist texture and subtle sweetness from coconut sugar and palm shortening, perfect for a gluten-free treat any time of day.

Ingredients

Wet Ingredients

  • 1/2 + 1/3 cups Coconut sugar
  • 1/2 cup Palm Shortening
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup almond milk

Dry Ingredients

  • 2 2/3 cups Gluten Free All Purpose Flour
  • 1.5 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp nutmeg
  • 3/4 tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 425°F to get it ready for baking the donuts evenly and properly.
  2. Mix Wet Ingredients: In a medium mixing bowl, beat together all the wet ingredients along with the coconut sugar until the mixture is smooth and fully combined.
  3. Prepare Dry Ingredients: In a separate bowl, thoroughly mix the gluten-free baking powder, baking soda, nutmeg, and salt to ensure even distribution of leavening and flavor.
  4. Combine Flour and Wet Mixture: Gradually add the gluten-free all-purpose flour into the wet ingredient mixture a little at a time. Use beaters to mix carefully and stop as soon as the batter is fully incorporated to avoid overmixing which can affect texture.
  5. Pipe Batter into Molds: Transfer the donut batter into a gallon-sized ziplock bag with the tip cut off or a reusable piping bag. Squeeze the batter evenly into the donut molds, filling each ring but not overfilling—aim to circle the mold twice.
  6. Bake Donuts: Place the filled donut mold in the oven and bake for 10 minutes, or until a toothpick or knife inserted into the donuts comes out clean, indicating they are fully baked.
  7. Cool and Frost: Remove the donuts from the oven and allow them to cool slightly in the mold before gently removing. Once cooled completely, frost the donuts with your preferred topping and serve.

Notes

  • Be careful not to overmix the batter to keep the donuts light and tender.
  • Using a piping bag helps to fill the donut molds neatly and evenly.
  • Allow donuts to cool sufficiently before frosting to prevent melting.
  • Almond milk can be substituted with any other plant-based or dairy milk if preferred.
  • Store leftover donuts in an airtight container to maintain freshness for up to 2 days.
