Instructions

  1. Prepare the Crust: Add the Mint Oreo cookies to a food processor and blitz until finely crushed into crumbs. Remove the blade and add the melted unsalted butter, folding the mixture until thoroughly combined.
  2. Form the Crust: Press the cookie and butter mixture firmly into the bottom and slightly up the sides of a pie dish to create the crust base. Place the crust in the freezer to set while preparing the filling.
  3. Whip the Cream: In a medium mixing bowl, beat the heavy cream for several minutes until it reaches stiff peaks, indicating it is fully whipped and airy.
  4. Prepare the Cream Cheese Mixture: In a separate large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar, a pinch of salt, mint extract, and green gel food coloring. Mix thoroughly until the mixture is evenly colored, slightly darker green than desired to compensate for lightening once whipped cream is folded in.
  5. Combine Whipped Cream and Cream Cheese Mixture: Gently fold the whipped cream into the cream cheese mixture until the color is uniform and no white streaks remain, creating a light and fluffy filling.
