Instructions
- Preheat: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Mix Ingredients: In a medium bowl, combine the peanut butter, coconut sugar, egg (or flaxseed egg), vanilla extract, and baking soda. Stir well until all ingredients are thoroughly mixed and form a consistent dough.
- Shape Cookies: Using a tablespoon, scoop the dough and roll it into balls. Place each ball about 1 inch apart on the prepared baking sheet to allow for spreading.
- Bake: Bake the cookies in the preheated oven for 9 to 10 minutes, or until set and slightly golden around the edges.
- Add Chocolate Gelt: Remove the cookies from the oven and immediately press a chocolate gelt coin into the center of each cookie. Press gently so the chocolate adheres without breaking the cookie.
