Description

Delight in these easy and festive Hanukkah Gelt Cookies that combine creamy peanut butter and rich coconut sugar, crowned with a classic chocolate gelt coin. Perfect for celebrating Hanukkah with a sweet treat that’s quick to prepare and irresistibly delicious.

Ingredients

Cookie Dough

  • 1 cup peanut butter
  • 1 cup coconut sugar
  • 1 egg (or 1 flaxseed egg for vegan option)
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda

Topping

  • High quality chocolate gelt coins

Instructions

  1. Preheat: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix Ingredients: In a medium bowl, combine the peanut butter, coconut sugar, egg (or flaxseed egg), vanilla extract, and baking soda. Stir well until all ingredients are thoroughly mixed and form a consistent dough.
  3. Shape Cookies: Using a tablespoon, scoop the dough and roll it into balls. Place each ball about 1 inch apart on the prepared baking sheet to allow for spreading.
  4. Bake: Bake the cookies in the preheated oven for 9 to 10 minutes, or until set and slightly golden around the edges.
  5. Add Chocolate Gelt: Remove the cookies from the oven and immediately press a chocolate gelt coin into the center of each cookie. Press gently so the chocolate adheres without breaking the cookie.
  6. Cool: Allow the cookies to cool completely on the baking sheet. As they cool, the chocolate gelt will harden, securing it nicely on top of each cookie.

Notes

  • For a vegan version, substitute the egg with a flaxseed egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, set for 5 minutes).
  • Use natural or creamy peanut butter without added sugar or oils for best texture.
  • Ensure cookies are spaced properly to prevent sticking as they bake and spread slightly.
  • Chocolate gelt coins can be substituted with any small chocolate coins or candies if desired.
  • Store cookies in an airtight container at room temperature for up to 5 days.
