Ingredients
Shortbread Layer
- 1 ⅔ cups almond flour
- ½ cup coconut flour
- ½ cup coconut oil (melted)
- ⅓ cup pure maple syrup
- 1 tsp vanilla extract
Caramel Layer
- ⅔ cup creamy nut butter (cashew, almond or peanut)
- ¼ cup coconut oil (melted)
- ¼ cup pure maple syrup
- ½ tsp vanilla extract
Chocolate Topping
- 1 tbsp coconut oil
- ¾ cup dark chocolate chips
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch baking pan with parchment paper to prevent sticking and make removal easy.

- Bake Shortbread: Bake the shortbread layer for 10 to 12 minutes, checking for a set middle and slightly golden edges, indicating it’s done baking.
- Prepare Caramel: While the shortbread bakes, add the nut butter, melted coconut oil, maple syrup, and vanilla extract into a skillet over medium heat. Bring the mixture to a light boil and then reduce to low heat, simmering for 8 minutes while stirring constantly to avoid burning, until thick and creamy.
- Combine Layers: After baking, allow the shortbread to cool for 10 minutes, then pour the prepared caramel evenly over the crust.
- Chill Caramel Layer: Place the pan in the freezer for at least 30 minutes or until the caramel layer has hardened to ensure the next layer adheres properly.
- Melt Chocolate: Melt the dark chocolate chips and coconut oil together by microwaving in 30-second increments, stirring between each session until fully melted. Alternatively, melt gently in a skillet over low heat.
- Top with Chocolate: Pour the melted chocolate evenly over the hardened caramel layer.
- Final Chill: Place the pan back into the freezer for at least 30 minutes, or until the entire bar is completely firm and set.
