Description

A delightful and healthy Strawberry Yogurt Parfait recipe combining the smooth texture of Greek yogurt, the fresh sweetness of strawberries, and a unique twist of gelatin jelly. Perfect for a wholesome treat, this dessert is easy to prepare and beautifully presented in individual glasses.

Ingredients

Gelatin Mixture

  • 3 oz gelatin powder
  • 1/2 cup room temperature water

Parfait Layers

  • 1 1/3 cup Greek yogurt
  • 4-6 fresh strawberries
  • 1 tbsp chopped almonds
  • A little mint to serve

Instructions

  1. Prepare Gelatin: Pour the gelatin powder into a bowl and add 1/2 cup of room temperature water. Let it stand for 15 minutes until the powder absorbs the water and expands. Heat the mixture in the microwave for 1 minute on high or alternatively, use a water bath for gentle heating.
  2. Whip Gelatin: Transfer the heated gelatin to a whisk glass and place that glass into a bowl of ice water. Whip the gelatin until it forms a white jelly-like texture.
  3. Chill Gelatin: Pour the whipped gelatin into individual parfait or stemless wine glasses and refrigerate for about 30 minutes until set and firm.
  4. Prepare Strawberries: Slice the strawberries and arrange them neatly around the edges inside the parfait glasses for an attractive visual effect.
  5. Assemble Parfait: Fill the center of the glasses with Greek yogurt up to the top.
  6. Garnish: Add a layer of fresh sliced strawberries, a sprinkle of chopped almonds, and a few mint leaves on top for decoration and extra flavor.

Notes

  • Ensure the water used to dissolve gelatin is room temperature to avoid clumps.
  • If you don’t have a microwave, gently heat the gelatin mixture over a water bath until fully dissolved.
  • For a tart flavor, use plain Greek yogurt. You can sweeten it lightly if desired.
  • Chilling time may vary depending on refrigerator temperature; ensure gelatin is fully set before proceeding.
  • Use fresh strawberries for the best taste and visual appeal.
