Ingredients
1 lb ground beef
4 medium potatoes, peeled and sliced
1 medium onion, chopped
1 can (15 oz) of diced tomatoes, drained
1 cup shredded cheddar cheese
1/2 cup milk
1/2 cup sour cream
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/2 teaspoon dried thyme
1/2 teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
- Add the chopped onion to the skillet with the beef and cook for another 2-3 minutes until softened.
- In a bowl, combine the milk, sour cream, garlic powder, onion powder, thyme, paprika, salt, and pepper. Stir until smooth.
- In a greased 9×13-inch baking dish, layer the sliced potatoes, followed by the cooked beef and onion mixture. Pour the milk and sour cream mixture over the top, spreading it evenly.
- Cover the dish with aluminum foil and bake for 40 minutes.
- After 40 minutes, remove the foil and sprinkle the shredded cheddar cheese over the casserole. Return it to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the potatoes are tender.
- Let the casserole cool for a few minutes before serving.

- Storage: Store any leftover casserole in an airtight container in the refrigerator for up to 3 days.
