Description

Hobo Casserole with Ground Beef and Potatoes is a comforting and hearty dish that combines seasoned beef, tender potatoes, and melted cheese, all baked to perfection in one pan.


Ingredients

1 lb ground beef

4 medium potatoes, peeled and sliced

1 medium onion, chopped

1 can (15 oz) of diced tomatoes, drained

1 cup shredded cheddar cheese

1/2 cup milk

1/2 cup sour cream

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon dried thyme

1/2 teaspoon paprika


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
  3. Add the chopped onion to the skillet with the beef and cook for another 2-3 minutes until softened.
  4. In a bowl, combine the milk, sour cream, garlic powder, onion powder, thyme, paprika, salt, and pepper. Stir until smooth.
  5. In a greased 9×13-inch baking dish, layer the sliced potatoes, followed by the cooked beef and onion mixture. Pour the milk and sour cream mixture over the top, spreading it evenly.
  6. Cover the dish with aluminum foil and bake for 40 minutes.
  7. After 40 minutes, remove the foil and sprinkle the shredded cheddar cheese over the casserole. Return it to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the potatoes are tender.
  8. Let the casserole cool for a few minutes before serving.

  1. Storage: Store any leftover casserole in an airtight container in the refrigerator for up to 3 days.
  2. Reheating: Reheat in the microwave or in the oven at 350°F (175°C) until warmed through. If reheating in the oven, cover with foil to prevent drying out.
