Ingredients
Donut Batter
- 4 tablespoons salted butter
- 1/3 cup maple syrup or honey
- 1/2 cup plain Greek yogurt
- 2 teaspoons vanilla extract
- 2 eggs, at room temperature
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mini chocolate chips
Chocolate Glaze
- 2 tablespoons avocado oil
- 1 cup mini chocolate chips (additional, for melting)
Instructions
- Preheat and prepare pans: Preheat the oven to 350° F. Grease a 6-cup doughnut pan or 12-cup muffin pan with melted butter to prevent sticking.
- Brown the butter: Add 4 tablespoons of salted butter to a pot over medium heat; cook for 2-3 minutes until the butter browns lightly and smells toasted. Remove from heat immediately to avoid burning.
- Mix wet ingredients: In a large mixing bowl, whisk together the browned butter, maple syrup (or honey), plain Greek yogurt, eggs, and vanilla extract until thoroughly combined.
- Add dry ingredients: To the wet mixture, add all purpose flour, baking powder, baking soda, and salt. Gently mix until just combined to avoid overmixing and tough donuts.
- Fill the donut pans: Divide the batter evenly into the prepared pan, filling each cavity about halfway to two-thirds full to allow space for rising during baking.
- Bake the donuts: Bake in the preheated oven for 10-12 minutes until the donuts are set and a toothpick inserted comes out clean.
- Cool and remove: Remove the donuts from the oven and let them cool in the pan for 5 minutes. Then run a knife around the edges to loosen them, invert the pan, and carefully remove the donuts to a wire rack.
- Make the glaze: In a microwave-safe bowl, combine 1 cup mini chocolate chips with 2 tablespoons avocado oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
- Dip or drizzle donuts: Dip each cooled donut into the chocolate glaze or drizzle the glaze on top. Allow the chocolate to set at room temperature or chill in the freezer briefly to speed up the setting process.
Notes
- You can substitute honey for maple syrup as the sweetener in the batter for a different flavor profile.
- Be careful not to overbake donuts as they can dry out quickly.
- If you don’t have a donut pan, use a muffin pan and treat them as donut holes or small cakes.
- For a dairy-free option, substitute the butter with a plant-based alternative and use a yogurt alternative.
- Store leftover donuts in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days.
