- Prepare the dry ingredients: Lightly grease a baking sheet with shortening or vegetable oil and preheat your oven to 450ºF. In a mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 1 teaspoon of baking powder, and ½ teaspoon of kosher salt.
- Cut the butter into the dry ingredients: Add the chilled, cubed butter into the dry mixture. Use a pastry cutter or two forks to cut the butter into the flour until the mixture resembles a coarse meal with pea-sized bits of butter visible.
- Add the evaporated milk: Pour 8 tablespoons of evaporated milk into the flour and butter mixture. Mix gently with a fork until the dough comes together but is not overworked.
- Roll out the biscuit dough: Turn the dough onto a floured surface and shape it into a disc with your hands. Using a floured rolling pin, roll the dough lightly one or two times until it is approximately 1 inch thick.
- Cut out the biscuits: Using a 2¾-inch cookie cutter, press firmly into the dough to cut out rounds. Gather the excess dough, roll it out again to 1 inch thickness, and continue cutting biscuits until all the dough is used. This yields about 8 biscuits.
- Bake the biscuits: Arrange the cut biscuits on the prepared baking sheet, making sure they are spaced evenly. Place the sheet in the preheated oven and bake for 10 minutes or until the bottoms are golden brown.
- To serve: Serve the biscuits warm with butter, jam, or your favorite accompaniment. Enjoy their tender, flaky texture fresh from the oven.
