Ingredients

Biscuits

  • 300 g Plain Flour
  • 0.5 tsp Baking Powder
  • 100 g Caster Sugar
  • 100 g Unsalted Butter
  • 80 g Golden Syrup
  • 1 Egg
  • 1 tsp Vanilla Extract

Royal Icing

  • 450 g Royal Icing Sugar
  • 80 ml Water (plus extra for flood icing)
  • Food Colour of your Choice


Instructions

  1. Preheat the Oven: Set your oven to 170°C (150°C fan-assisted) or 340°F (300°F fan-assisted) to prepare for baking the biscuits.
  2. Combine Dry Ingredients: In a large mixing bowl, mix together the plain flour, baking powder, and caster sugar until evenly combined.
  3. Add Butter: Incorporate the unsalted butter by rubbing it into the dry ingredients using your fingers until the mixture becomes crumbly in texture.
  4. Mix Wet Ingredients: Add the golden syrup, egg, and vanilla extract to the crumbly mixture and combine thoroughly until a smooth dough forms.
  5. Chill the Dough: Wrap the dough tightly in clingfilm and refrigerate for 30 minutes to firm it up for easier rolling and cutting.
  6. Roll Out the Dough: On a lightly floured surface, roll the chilled dough out evenly to about 5mm thickness.
  7. Cut the Biscuits: Use a cookie cutter to cut out the biscuits and then cut a smaller hole in the centre of each one to replicate the classic Party Ring shape.
  8. Prepare for Baking: Arrange the cut biscuits on a lined baking tray, ensuring there is space between each biscuit to allow for even baking.
  9. Bake the Biscuits: Place the tray in the preheated oven and bake for 10 minutes, or until the biscuits turn lightly golden in color.
  10. Cool Biscuits: Remove from the oven and let them cool slightly on the baking tray before transferring them to a wire cooling rack to cool completely.
  11. Prepare Royal Icing: In a bowl, mix the royal icing sugar and 80 ml water and whisk vigorously for about 5 minutes until stiff peaks form and the icing turns white and glossy.
  12. Color the Icing: Divide the icing into separate bowls and add food coloring to each as desired, reserving some plain white icing for detail work.
  13. Pipe the Outline: Transfer the colored icing to piping bags, snip the ends, and pipe the outline edges and center holes of the biscuits. Allow the outlines to set for 10 minutes.
  14. Flood Icing: Thin the leftover icing with a small amount of water to achieve flood icing consistency, transfer to piping bags, and quickly fill in the outlined areas to create a smooth iced surface.
  15. Decorate Details: Use the reserved white icing to add decorative lines or patterns across the biscuits. You can pull a toothpick through the lines to create fun swirls or designs.
  16. Set the Icing: Preheat your oven to its lowest setting and return the decorated biscuits to the oven for 30 minutes to allow the icing to set properly.
