- 80 ml Water (plus extra for flood icing)
- Food Colour of your Choice
Instructions
- Preheat the Oven: Set your oven to 170°C (150°C fan-assisted) or 340°F (300°F fan-assisted) to prepare for baking the biscuits.
- Combine Dry Ingredients: In a large mixing bowl, mix together the plain flour, baking powder, and caster sugar until evenly combined.
- Add Butter: Incorporate the unsalted butter by rubbing it into the dry ingredients using your fingers until the mixture becomes crumbly in texture.
- Mix Wet Ingredients: Add the golden syrup, egg, and vanilla extract to the crumbly mixture and combine thoroughly until a smooth dough forms.
- Chill the Dough: Wrap the dough tightly in clingfilm and refrigerate for 30 minutes to firm it up for easier rolling and cutting.
- Roll Out the Dough: On a lightly floured surface, roll the chilled dough out evenly to about 5mm thickness.
- Cut the Biscuits: Use a cookie cutter to cut out the biscuits and then cut a smaller hole in the centre of each one to replicate the classic Party Ring shape.
- Prepare for Baking: Arrange the cut biscuits on a lined baking tray, ensuring there is space between each biscuit to allow for even baking.
- Bake the Biscuits: Place the tray in the preheated oven and bake for 10 minutes, or until the biscuits turn lightly golden in color.
- Cool Biscuits: Remove from the oven and let them cool slightly on the baking tray before transferring them to a wire cooling rack to cool completely.
- Prepare Royal Icing: In a bowl, mix the royal icing sugar and 80 ml water and whisk vigorously for about 5 minutes until stiff peaks form and the icing turns white and glossy.
- Color the Icing: Divide the icing into separate bowls and add food coloring to each as desired, reserving some plain white icing for detail work.
- Pipe the Outline: Transfer the colored icing to piping bags, snip the ends, and pipe the outline edges and center holes of the biscuits. Allow the outlines to set for 10 minutes.
- Flood Icing: Thin the leftover icing with a small amount of water to achieve flood icing consistency, transfer to piping bags, and quickly fill in the outlined areas to create a smooth iced surface.
- Decorate Details: Use the reserved white icing to add decorative lines or patterns across the biscuits. You can pull a toothpick through the lines to create fun swirls or designs.
- Set the Icing: Preheat your oven to its lowest setting and return the decorated biscuits to the oven for 30 minutes to allow the icing to set properly.
- Final Setting: Keep the oven on low and leave the biscuits inside for an additional 30 minutes before serving or storing to ensure the icing hardens fully.
