Description

Ingredients

For the Crust

  • 1 ½ cup (190g) all-purpose flour
  • ¼ teaspoon salt
  • 3 Tablespoons (45g) granulated sugar
  • ½ cup (115g) cold unsalted butter, diced
  • ¼ cup (60 ml) ice water, plus more as needed
  • 1 egg, beaten, for brushing
  • 2 Tablespoons granulated sugar, for brushing

For the Filling

  • 4-5 pears, peeled, cored and sliced
  • ½ lemon, freshly squeezed
  • 2 teaspoons fresh rosemary, chopped
  • ⅓ cup (80 ml) honey
  • ⅓ cup (80 ml) water
  • 3 Tablespoons almond meal


Instructions

  1. Prepare the crust: In a medium bowl, whisk together the all-purpose flour, granulated sugar, and salt. Cut in the cold, diced unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse, pea-sized crumbs.
  2. Add water and form dough: Gradually add the ice water and gently knead the mixture a few times in the bowl until the dough just comes together. Be careful not to overwork it.
  3. Chill the dough: Shape the dough into a ball, then flatten it into a thick disk. Wrap it tightly in plastic wrap and refrigerate for 30 minutes to 1 hour to firm up.
  4. Preheat oven and prepare baking sheet: Preheat your oven to 425°F (200°C). Line a large baking sheet with parchment paper and set aside.
  5. Make the rosemary honey syrup: In a small saucepan over medium heat, combine the honey, water, and chopped rosemary. Stir occasionally until the honey dissolves and the syrup thickens slightly, about 10-15 minutes. Remove from heat and set aside.
  6. Prepare the pears: Peel, core, and slice the pears. Immediately drizzle the slices with freshly squeezed lemon juice to prevent browning and set them aside.
  7. Roll out the dough: On a lightly floured surface, roll the chilled dough into a 12-inch (30 cm) circle. Trim edges if necessary for a clean shape. Transfer the dough carefully onto the prepared baking sheet.
  8. Assemble the galette: Sprinkle the almond meal evenly over the dough, leaving a 2 to 3-inch (5-7 cm) border all around. Arrange the pear slices neatly on top of the almond meal. Drizzle the rosemary honey syrup gently over the pears to glaze them.
  9. Fold and seal: Fold the edges of the dough over the pears, overlapping as needed to create a rustic crust border. Press the edges gently to seal.
  10. Final touches: Brush the crust with the beaten egg for a shiny, golden finish. Sprinkle the crust edges with the additional granulated sugar for added texture and sweetness.
  11. Bake the galette: Bake the galette in the preheated oven for approximately 35 minutes, or until the crust turns a beautiful golden brown and the pears are tender.
  12. Cool and serve: Remove the galette from the oven and allow it to cool slightly on the baking sheet before slicing and serving. Enjoy warm or at room temperature, optionally with vanilla ice cream or whipped cream.
